Vegan Banana Bread

The best banana bread ever (in my humble opinion)

Now, lets just get it out of the way.. we know everybody has taken lockdown as an opportunity to bake mass amounts of banana bread and we must admit we got sucked into the hype. This however, led us to the best banana bread recipe that we have found. I will put my reputation on this recipe. Anyway, enough about my love for this vegan banana bread! Go and try it for yourself:

Ingredients

  • 60ml (1/4 cup) vegetable oil, plus extra for greasing
  • 240g (2 cups) plain flour, plus extra for dusting
  • 3 medium ripe bananas, plus 1 extrqa sliced lengthways
  • 215g (1/2 cup) soft light brown sugar
  • 2tsp vanilla extract
  • 60ml (1/4 cup) plant-based milk
  • 1tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon

Method

  1. Preheat the overn to 180C/160C Fan/350F/gas 4. Grease a 900g (2lb) loaf tin with oul, then dust it with flour, tapping out the excess.

  2. Mush the bananas in a bowl into a lumpy mash, then add the brown sugar, oil, vanilla and plant-based milk and mix together.

  3. Sift over the flour, bicarbonate of soda, salt and cinnamon and use a wooden spoon to stir everything together well. 

  4. Stir in the chcolate chips. 

  5. Transfer the batter to the loaf tin and top with the banana slices. Bake for about 40 minutes, then cover with tin foil and bake for 10-15 minutes longer or until a sharp knife inserted into the centre comes out with juist a couple of crumbs. 

  6. Leave the tin on a wire rack to cool for a few minutes, then when cooler, tip out of the tin and leave to cool completely.
